Diese k\u00f6nnen durch das Auskochen herausgefiltert werden.<br \/>\nTr\u00e4ger dieser Substanzen ist das Protein Kollagen, das im Tierk\u00f6rper als Ger\u00fcsteiwei\u00dfstoff vorhanden ist. Durch Hitzeeinwirkung verwandelt sich das wasserunl\u00f6sliche Kollagen in das wasserl\u00f6sliche Protein Glutin. Das Glutin bewirkt die Klebe- und Bindekraft des Leims.
